[Evolution] Evolution does not use default algorithm?

Hej there,
gpg2 --version shows me
gpg (GnuPG) 2.2.3
https://lists.gnupg.org/pipermail/gnupg-announce/2014q4/000357.html says that from Version 2.1. the default cipher for --symmetric changed to AES-128.
When i am sending a singend mail with Evolution 3.26.4-1.fc27 it tells me gpg: armor header: Hash: SHA256
My question: Why does it use the GnuPG defaults here?
In the security tab of my account preferences i only find "Signing algorithm: Default/SHA1/SHA256/SHA348/SHA512" as options. But none of the others listed around here https://www.gnupg.org/faq/gnupg-faq.html#define_aes and "Default" doesn't seems to use the default.
Any idea?
