Hi,
the 'Default' here means the default in the Camel (basically the mailer
part of evolution) code, not the default of gpg. The list of available
hash algorithms is hard-coded in the code.
Feel free to file a bug against evolution-data-server in the GNOME
bugzilla [1] to extend the list of hash algorithms, though such change
won't reach 3.28 and should wait for 3.30 due to code freezes which
will start today, after the 3.27.90 release.
