You won't be able to do that, until Ubuntu builds and provides a new
version of the software in their package repositories.  I don't know
how long that will take but you can file an issue  on Launchpad and
maybe they'll accelerate the release.

What I've been doing (since I still use Ubuntu 20.04 which has an even
older version of Evolution, but I need newer versions to use with our
Exchange server at work) is install the flatpak version of Evolution;
it's pretty easy:

  $ sudo apt-get install flatpak
  $ flatpak remote-add flathub
https://flathub.org/repo/flathub.flatpakrepo

to install the flatpak facility and add the standard flathub
repository, then to install Evolution you can use:

  $ flatpak install evolution

to get the latest.  Or was it "flatpak install org.gnome.Evolution" ?
 I can't remember now.

Some people really don't like snap and flatpak but this works for me.
