Surely the client side decorations. You probably have already disabled
that:
gsettings set org.gnome.evolution.shell use-header-bar false

I wouldn't consider Firefox exactly a GTK application. That gtk3-demo
fails show quite clearly that the problem is a general one of GTK apps
in KDE.
