To re-iterate what Ralf said, the place that *Evolution* stores sent
mail is a per-account configuration under "Defaults" for that account.

However, some mail providers also store a copy of outgoing mail
independently of Evolution (or any other MUA) - this is often
configurable, but some, such as Gmail I believe, it is non-negotiable.
