Hi,
it's currently (including the upcoming 3.58.x series) not possible to
do. When a user shares a calendar with you, which can be done from the
evolution too, simply right-click the m365 calendar and pick
Permissions from it, then the server sends also an "invitation" mail,
which allows you to subscribe to it (though only EWS can read it at the
moment). If I'm not mistaken, if you'll use
https://outlook.office365.com/mail and subscribe to that calendar there
(click a button in that mail), then it'll show up in the Evolution too,
the next time it'll re-check what calendars are provided by the server.
Not so great, I'm sorry.
There [1] is no bug filled for this yet. I do not know whether the
Microsoft Graph API allows any such thing, it's more limiting than the
EWS protocol in many aspects.
