there had been some bugs in the code related to these new UI
customizations. Please update to 3.56.2, which have them fixed.

The list of actions depends on the context. Like in the Mail you do not
see Calendar actions and vice versa.

The "Paste Quotation" is available only in the message composer, thus
open it and then... it's not in the menu, right-click on the toolbar
(not above toolbar buttons) and pick "Customize Toolbar..." (it can be
done on all toolbars), which will open the dialog as before, where you
continue as before.
