Usually I just enter the term into the field without using the dropdown
options.
My search terms are usually an obscure "single" word that I know is in the
subject line. When I don't get result, then I try to restrict it with "Message
contains". I not sure what the difference is between

So I guess it's "Subject or addresses contain" by default, as those searches
generally give a short list to locate it. I have tried to restrict the search
to current folder.

My mail server is Mailcow, but it's lightning fast even though it's a long way
from me: I'm in the French Caribbean and my IP is in France and the mail
server is in Germany.

Never tried dates, but I will try it and let you know. Generally I Archive
last year's emails, so I would target the Archived folder for anything <2025

Current folder is generally my search, but occasionally try subfolders, but it
take more time than I am prepared to wait. 

Overall Milan, it's a good refinement. FWIW, many years ago, in my dark
Windows days, I had Ritlabs' The Bat and they used some ISAM search that had
an extensive  query form. At the time I remember being able to search through
250k emails in maybe 5 seconds, but I am not comapring it this, just
mentioning it as I don't know what query approach Evo uses.
