You're absolutely right, they are backslashes.
I am not using EWS. The two cloud services that show the problem are
Google Workspace (GWS) and Infomaniak kSuite; sorry I neglected to
mention that in my original post. The behavior is inconsistent between
clients:
Evolution adds one backslash to contacts from GWS and two to those from
kSuite. Apple Contacts adds only one to either source, but only since
iPadOS 18.7. Under iPadOS 18.6.2, contact notes still looked fine.
Betterbird & Thunderbird add two to kSuite contacts; I haven't tried
GWS yet. Outlook doesn't add any to GWS contacts, but screws up the
formatting in other ways, which is why I am looking for alternatives.
Outlook & Samsung can't use CardDAV without a 3d-party app, but they
don't add any spurious characters to contact notes from GWS.
