Hi,
it depends not only on the headers, but also on the flags the message
has. In fact the user or the message rules or anything else can set a
junk flag on the message, then the underlying IMAP code moves such
marked messages into the configure real junk folder (or keeps them
where they are when the Junk folder is not a real folder).
Some servers can reject to unset the Junk flag on the message, I think
I saw something like that in the past, but it's a long time ago. it can
be they reject to unset it in the Junk folder, or they preserve the
flag when moving the message back to the Inbox from the Junk folder
(the IMAP code first unsets the flag and then moves the message, if I
recall correctly).
You mentioned in your (almost) follow up mail that you face this with
the gmx.de server. I have there a test account, thus I can give it a
try. Would you mind to file a bug report at:
https://gitlab.gnome.org/GNOME/evolution-data-server/-/issues
thus it's properly tracked, please? It'll be better done that way,
because this comes up from time to time back.
