	Hi,
the Microsoft Graph API, which is behind the "Microsoft 365" accounts,
is different from the EWS in many ways.

You can get other user's calendars into the Evolution when you have
them added on the server, like when you open
https://outlook.office365.com/calendar/
and there Add calendar->Add from directory, or similar way.

Once you have the calendar there it'll show up in Evolution the next
time it'll refresh the list of the calendars (usually after
start/login), or you can initiate it by right-click the account node in
the list of the calendars in the Calendar view and pick "Refresh list
of account calendars" from the context menu.
