The composer used in Evolution is part of the GTK ecosystem (I believe)
and so not really something that the Evolution devs can modify just for
Evolution.

However ...

There is a plugin for Evolution to use an external editor. Go to Edit 
-> Preferences -> Plug-ins and select "External Editor" and on the
Configuration tab you can specify the command to launch the editor. If
you don't have the plug-ins then on Ubuntu install the package(s)
"evolution-plugins*"

You can specify to launch that editor every time you compose, although
initially I would suggest you launch it when needed: in the composer do
File -> Compose in External Editor (Shift-Ctrl-E).
