Hi,
the evolution(-data-server) accesses the Google events through their
CalDAV interface. They do not provide everything what the special
Google Calendar API offers, sometimes because there is no counterpart
in the CalDAV, sometimes for the reasons only they know.
Evolution uses standard COLOR property [1] on the events, which the
server ignores when the event is saved. I checked the event content
when the color is set on the server, in the web interface, and it is
not passed over CalDAV. That's sad. The best would be to have the
Google's CalDAV interface use this COLOR property, but trying to
convince the giant to do the little thing...
I'm quite sure the apps which can show you the color of the event on
the Google calendar do not use the CalDAV interface, they use the one
specific to Google.
